Ingredients
8 apples (I chose a variety - Empire, Red Delicious, Gala and Pink Lady from a local farm)
1/2 cup water
1/2 cup brown sugar
2 tsp cinnamon
Prep time: 10min
Cooking Time: 8-10 hours low, slow cooker (or 4-6 hours on high)

Directions
1. Peel and cube your apples (this is the hardest part, I assure you!), and place them in your slow cooker. *Note that this recipe does make a chunkier applesauce than your standard store-bought jar. If you prefer a smoother applesauce, cut your apples thinner (or even in thin slices) before placing them in the slow cooker, and continue with steps below.
2. Add brown sugar, water and cinnamon. Toss to coat. That part is important! One year I left the brown sugar and cinnamon sitting on top of the apples and walked away from the slow cooker. When I came back a few hours later the sugar had blackened. So be sure to toss (or mix) it into the apples.
3.Cover and cook on low 8-10 hours (or high 3-4 hours). Halfway through cooking time, mash up the apples with a potato masher, but leave some chunks if you prefer!
4. That's it! You can serve it warm or cold. If I'm making it for a holiday I usually cook it the day before and keep it in the fridge. And FYI, the house smells amazing while it's cooking!
